The nifty new Swift rice cube is now available at Havens for just £9.95, so if all this sunshine has put you in the mood for a lighter bite, why not give homemade sushi a go? No need for fiddly presentation, just pop your sushi rice mixture into the rice cube, press down and, bingo – you’ve got yourself a perfect sushi bite.
Here’s a tasty recipe idea to get you started:
- 300g sushi rice
- 2 tbsp rice or white wine vinegar
- 1 tsp caster sugar
- 1 large avocado
- juice ½ lemon
- 4 sheets nori seaweed
- 4 large slices smoked salmon
- 1 bunch chives
Just cook the rice in 600ml of water, stir through the vinegar and sugar and leave to cool. Meanwhile, chop the avocado, smoked salmon and chives into approx 5mm pieces,
squeeze over the lemon juice, then mix with
the rice and pop the mixture into the rice cube. Once pressed, wrap with a piece of nori seaweed. Makes about 32 pieces.
